Still Truckin'

Here was today's lunch.

I know, my food colors need to vary from green in the future.  My food colors had more variety for breakfast and supper.  Greek yogurt with blueberries and granola, and lasagna soup (yum) for dinner. I got my first non family compliment on weight loss yesterday at work. It made my day!

We have lunch catered tomorrow so I will bring a salad like above and eat a small portion of the bar-b-que that is being brought.

Owen is really struggling this year on focusing throughout class and he has been bringing home an increasing amount of homework.  We have had meetings with both the teacher and principal to give us and him ideas on how to improve. He is so intelligent and kind hearted but he just can't seem to focus.  We are going to talk with the Dr. this next week. I hope we can figure this out before he gets too much older and the work gets harder.

30 Day Challenge!

So I have to decided to incorporate another healthy option into my day by bringing my lunch to work daily. I not only will be eating healthier, but will save $80 to $100 per month! Here is my Day 1 lunch I have packed.


It was so hot at Zumba tonight! It was my first time at EHS and loved that the class was small but OMG it was smokin'. I am still so glad that I have found exercise that I love.

Zumba'd OUT!

I started Zumba classes at Owen's school about 3 months ago and LOVE it!  I was very reserved but open minded before my first class.  I thought everyone would look like they do in the infomercials and I flat out wouldn't.  I showed up for my first class and was happy to see familiar faces immediately, a first grade teacher, the secretary and I was friends growing up the instructor's brother!  Now it's time for Zumba to begin.  Jonathon, the instructor, was up on the stage and was helpful throughout because the routines are the same over some time period and me, being the newbie, was so lost! I kept my eyes on his feet and by the 3rd song, I was really getting into it and boy, was I sweating! Now, a little less of me shows up several times a week, I've made new friends and I'm doing something for me.  Several friends from work have come, they don't know it but it means so much.  I feel they are supporting me in my journey.

Well, I've had the oatmeal banana muffins for several mornings now and I mast say, blah...They would be better with blueberries maybe but not something that I would make again.  Oh well, we tried.  Off to the next recipe.

I saw a Pinterest post about a blogger who made and took her lunch for 30 days as a challenge and blogged recipes and ideas.  I think I will give it a try starting Sunday so I will have the weekend to buy food and gather some recipes.  I am currently spending between $40-$60 dollars per pay period on food!  Ridiculous!  I would much rather spend that on shoes, maybe save for a spring break trip, anything!

I am off to bed, sore but a "good" sore. Night!

So, Here Goes Nothing!

I'm going to do this!  My goals for this blog are to give updates on my family's life, share recipes I've tried and to post pics of travels and life in general.  My new years resolution for 2012 is to generally live healthier.  I'm trying new recipes, eating out less, going to Zumba, and dancing on our new Xbox 360.

I received my first Canon DSLR for Christmas (woot woot) and yesterday Gary, Owen and I decided to take it out to the mountains to get some hiking in and give my camera a try.  After dinner at Tami's Cafe by Lake Lawtonka, we drove out to Parallel Forest.  We have never been and I've heard tales of an old cabin that I thought would be neat to try to find.  We never found the cabin but did find a neat stone mill, came across some longhorn and unfortunately fell and hurt my pinky and bruised my left side in several places.  Aside from a few small cosmetic scratches, my camera survived the fall (whew.)  I posted the pics on Flickr that you can see at the top of my blog.

Today Owen and I made Banana Oatmeal muffins with  mini chocolate chips from a recipe I found on Pinterest.  Roni from greenlitebites.com is where I got this.  She says they are 3 WW points each.



  • 3 mashed bananas (the more ripe the better!)
  • 1 cup vanilla Almond milk (you could use skim but you may want to add a little sweetener) I used vanilla soy milk
  • 2 eggs
  • 1 tbsp Baking powder
  • 3 cups Old Fashion or Rolled Oats
  • 1 tsp vanilla extract
  • 3 tbsp mini chocolate chips
Preheat oven to 375 degrees
Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans.
Spray a muffin pan and/or liners with with non-stick spray.
Stir the chocolate chips into the oatmeal batter.
Divide batter into 15 muffin cups. They should be just about filled.
Bake 20-30 minutes, you’ll see the edges just starting to brown and they will be firm to the touch.
The muffins may stick when hot but are removed easily when cooled for a bit.

Gary and I liked them but Owen, not so much.
